My first time having a pavlova was made by a good friend who is an absolute pro at commanding egg whites to do her bidding. I actually forgot about pavlovas until just last month. Women’s Equality Is My Jam

Happy Women’s Equality Day!

Women, take the day off! Screw wearing a bra! Channel centuries of feminist power to tackle your hurdles!
Men, just like, be cool, okay?

All kidding aside, today’s post is in honor of Women’s Equality Day, commemorating the ratifying of the 19th Amendment of the Consitution which granted women the right to vote! Also, because I can’t help myself, I used this day as an opportunity to try out a new cookie recipe. I’m calling them “Strawberry Suffrage Sandwich Cookies”, jam filled cookies that ooze equal rights! (Sorry, I’ll rein it in.)

But Michelle, baking on Women’s Equality Day? Isn’t that against the whole idea?
Well, while the suffrage movement might have started as empowering women beyond the home, this day also celebrates the continuing efforts to give women equal rights and opportunities, regardless of how women choose to use them. Plus – fun fact – in the late 1800s through 1920, suffragists published cookbooks as a way to spread propaganda for the cause and to help raise money. The very first cookbook was simply called The Women Suffrage Cook Book!

SAY CHEESE! LEMON CHEESECAKE THAT IS

Lemon Curd Cheesecake Cupcakes on Plate with Lemon Garnish

In grade school, my mother used to bake for all my class parties, birthdays, and bake sales. There were cookies and cupcakes and occasionally jello. A popular favorite was her mini cheesecake cupcakes: bite-size creamy deliciousness, always with a slice of kiwi and mandarin on top.

Well, this isn’t exactly my mother’s recipe but pretty darn close. With an extra zest of lemon and replacing the kiwi and mandarin with a dollop of lemon curd, we’ve stepped up the mini cheesecake game!
